Ingredients
  

  • 1 cup dried lentils
  • 1 bottle 600ml bottled water (or more as needed)
  • 1 small onion diced
  • 1 small tomato finely chopped (optional)
  • 1 tbsp ground cumin
  • 1/2 tsp black pepper
  • 1 clove garlic minced
  • 1 tbsp oil or ghee
  • Salt to taste
  • Optional: turmeric or a dash of cardamom for extra warmth

Instructions
 

  • Rinse lentils well and place in a large pot.
  • Boil until lentils are soft.
  • Blend the lentils using a blender with more bottled water if needed until you reach a smooth consistency.
  • Return the blended lentils to the pot and simmer gently.
  • In a separate pan, sauté the onion and garlic in oil until golden.
  • If using tomato, add it now and cook until softened.
  • Add cumin and black pepper to the sauté mix, then stir into the lentil pot.
  • Adjust salt and spices. Serve warm.
  • Topped with extra sauté if desired.

Notes

    • This soup can be thinned for a broth-like consistency or kept thick.
    • Serve with warm bread.
    • Great for Ramadan and light dinners.
